Description

Ingredients

4 cups fresh strawberries, hulled and sliced

1 cup sugar, divided

1 tablespoon cornstarch

1 teaspoon lemon juice

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup cold unsalted butter, cubed

1/2 cup milk

1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or an equivalent-sized dish.
  2. In a bowl, combine the sliced strawberries, 1/2 cup of sugar, cornstarch, and lemon juice. Toss until the strawberries are well-coated. Pour the mixture into the prepared baking dish.
  3. In a separate bowl, whisk together the flour, remaining sugar, baking powder, and salt.
  4. Add the cold cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.
  5. Stir in the milk and vanilla extract to form a thick batter.
  6. Spoon the batter evenly over the strawberries in the baking dish. Don’t worry if some of the strawberries are exposed; the topping will spread and cover them as it bakes.
  7. Bake for 35-40 minutes, or until the topping is golden brown and the strawberries are bubbling.
  8. Allow the cobbler to cool for a few minutes before serving. Enjoy it warm with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
