Description

A delightful Strawberry Honey Bun Cake that combines a moist strawberry-flavored base with a cinnamon brown sugar swirl and a creamy strawberry-flavored icing. This cake is perfect for breakfast or dessert and offers a sweet, fruity twist on the classic honey bun flavor.

Ingredients

Cake Batter

  • 1 box Strawberry Cake Mix (15.25 ounces)
  • 4 Large Eggs
  • 8 ounces Cream Cheese, softened
  • 2/3 cup Vegetable Oil

Cinnamon Sugar Swirl

  • 1 cup Brown Sugar
  • 2 teaspoons Ground Cinnamon

Icing

  • 2 cups Confectioners Sugar
  • 1/4 cup Milk
  • 1 teaspoon Strawberry Extract
  • Red Food Coloring, a few drops

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan with non-stick cooking spray to prevent the cake from sticking.
  2. Make Cake Batter: In a large mixing bowl, combine the strawberry cake mix, softened cream cheese, eggs, and vegetable oil. Stir until the mixture is smooth and well combined.
  3. Prepare Cinnamon Sugar: In a separate small bowl, mix together the brown sugar and ground cinnamon until evenly incorporated.
  4. Layer Batter and Cinnamon Sugar: Pour half of the cake batter into the prepared pan, spreading it evenly. Sprinkle the cinnamon sugar mixture evenly over the batter layer.
  5. Add Remaining Batter: Pour the remaining cake batter over the cinnamon sugar layer, carefully spreading it to cover the entire surface.
  6. Bake the Cake: Bake in the preheated oven for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
  7. Make the Icing: While the cake is baking, mix together the confectioners sugar, milk, and strawberry extract in a bowl until smooth. Add a few drops of red food coloring to achieve a pink hue.
  8. Apply Icing and Cool: Once the cake is done, pour the icing evenly over the warm cake. Allow the cake to cool completely so the icing sets before serving.

Notes

  • Use softened cream cheese to ensure it blends smoothly into the batter.
  • If you prefer a stronger strawberry flavor, add an extra 1/2 teaspoon of strawberry extract in the icing.
  • For a more pronounced cinnamon swirl, increase cinnamon to 3 teaspoons.
  • Make sure the cake cools completely before slicing for clean cuts and best texture.
  • Store leftover cake covered at room temperature for up to 2 days or refrigerate for up to 4 days.
