Description

This refreshing Strawberry Nice Cream is a healthy, dairy-free alternative to traditional ice cream. Made with frozen strawberries and a few simple ingredients, it’s a quick and delicious treat that’s perfect for hot days.

Ingredients

3 cups frozen strawberries

1 medium ripe banana

1/4 cup coconut milk (or any plant-based milk)

1 tsp vanilla extract

Instructions

  1. In a high-speed blender or food processor, add the frozen strawberries, banana, coconut milk, and vanilla extract.
  2. Blend the ingredients until smooth and creamy. You may need to scrape down the sides of the blender or food processor to ensure everything blends evenly.
  3. If the mixture is too thick, add a little more coconut milk (or plant-based milk of your choice) to reach your desired consistency.
  4. Once blended, scoop the nice cream into bowls or cones and serve immediately for a soft-serve texture. Alternatively, you can freeze it for about an hour for a firmer texture.

Notes

  1. Optional add-ins: Chocolate chips, nuts, or a drizzle of honey for extra sweetness.
  2. Other fruit variations: Try swapping the strawberries for mango, blueberries, or raspberries.
  3. If you want a sweeter taste, you can add maple syrup or agave nectar, though the banana and strawberries should provide enough natural sweetness.
  4. For a creamier texture, add a spoonful of coconut yogurt or more coconut milk.
  5. If storing leftovers, keep in an airtight container in the freezer for up to a week.
  6. Can be made ahead and stored for a party. Just let it soften slightly before serving.
