Description

Delightful Strawberry Sprinkle Surprise Cupcakes featuring a hidden sprinkle center and creamy strawberry-infused frosting. These 12 tender cupcakes are filled with colorful sprinkles, topped with luscious strawberry buttercream, and crowned with fresh strawberry slices, making them perfect for celebrations or a sweet treat.

Ingredients

For the Cupcakes and Filling

  • 12 strawberry cupcakes
  • ¼ cup sprinkles
  • 3-4 tbsp pureed strawberries (about ½ cup diced strawberries)

For the Frosting

  • ¼ cup (1 stick) butter, softened to room temperature
  • 1 ¾ cups powdered sugar
  • 4 strawberries, sliced (for garnish)

Instructions

  1. Prepare the Strawberry Puree: Slice and puree your strawberries using a food processor until smooth, setting aside approximately 3-4 tablespoons for the frosting.
  2. Fill the Cupcakes: Using a frosting tip, carefully cut out the center of each cupcake to create a hollow. Fill this cavity with sprinkles, then replace the removed center, gently pressing down to seal.
  3. Make the Frosting Base: In a mixer bowl, combine the softened butter and pureed strawberries. Beat on high speed until the mixture becomes creamy and smooth.
  4. Add Powdered Sugar: Gradually add half of the powdered sugar to the butter-strawberry mixture and mix on low speed. Increase to medium speed to blend well, then repeat with the remaining powdered sugar, finishing with a high-speed beat to achieve fluffy frosting.
  5. Pipe the Frosting: Transfer the frosting to a piping bag fitted with the same tip used to hollow the cupcakes. Pipe the frosting onto each cupcake in a circular motion, starting from one edge, spiraling around and into the center for a beautiful swirl.
  6. Garnish: Gently press a sliced strawberry onto the top center of each frosted cupcake as a fresh, decorative finish.

Notes

  • Ensure the butter is softened to room temperature for easy mixing and smooth frosting consistency.
  • You can substitute fresh strawberries with frozen if fresh are not available, just thaw and drain excess liquid before pureeing.
  • For added flavor, try mixing a teaspoon of vanilla extract into the frosting with the butter and strawberries.
  • The sprinkle-filled surprise offers a fun texture contrast and visual delight when biting into the cupcake.
  • Store cupcakes in an airtight container in the refrigerator for up to 3 days.
