Ingredients

Vanilla Layer

  • 1 cup full fat coconut milk
  • 1 tbsp organic vanilla extract
  • 3 tbsp maple syrup or honey

Strawberry Layer

  • 2.5 – 3 cups fresh strawberries
  • 1/2 cup full fat coconut milk
  • 1 tbsp organic vanilla extract
  • 2 tbsp maple syrup or honey


Instructions

  1. Prepare Vanilla Layer: Place 1 cup of full fat coconut milk, 1 tablespoon organic vanilla extract, and 3 tablespoons maple syrup or honey into your food processor or high speed blender. Blend until the mixture is smooth and creamy.
  2. Fill Popsicle Molds Partially: Pour the vanilla mixture into your popsicle molds, filling each about one-third to one-half full. Place the molds in the freezer and let them freeze for 20-25 minutes until slightly firm.
  3. Prepare Strawberry Layer: While the vanilla layer freezes, add 2.5 to 3 cups fresh strawberries, 1/2 cup full fat coconut milk, 1 tablespoon organic vanilla extract, and 2 tablespoons maple syrup or honey to your blender. Blend thoroughly until smooth.
  4. Layer Strawberry Mixture: Remove the popsicle molds from the freezer. Pour the strawberry mixture gently on top of the partially frozen vanilla layer in each mold.
  5. Insert Popsicle Sticks: Place the lid on the mold and insert popsicle sticks into the designated slots on the lid, ensuring they are centered in each popsicle.
  6. Freeze Fully: Return the molds to the freezer and freeze for at least 3 hours, or until the popsicles are completely firm.
