Instructions

- Make Strawberry Brownie Batter: In a large mixing bowl, combine the strawberry cake mix, oil, whole egg, egg yolk, and vanilla extract. Using an electric mixer on medium to medium-high speed, blend until a thick dough forms. Fold in the white chocolate chips by hand, allowing for uneven distribution as they don’t fully incorporate into the batter.
- Prepare Cream Cheese Mixture: In a separate medium bowl, beat the softened cream cheese, sugar, egg white, and vanilla extract together until the mixture is smooth and creamy, ensuring no lumps remain.
- Assemble Layers: Press half of the strawberry brownie batter evenly into the bottom of the prepared baking pan. Dollop spoonfuls of the cream cheese mixture over this layer, then drop spoonfuls of the remaining strawberry batter all over the cream cheese spots to cover the bottom layer completely with a marbled effect.
- Bake the Brownies: Place the pan in the preheated oven and bake for 28-32 minutes. Test doneness by inserting a toothpick about 2 inches from the edge; it should come out mostly clean but the center should be just set. For a fudgy texture, aim for an internal temperature around 180°F (82°C). Avoid overbaking to prevent dryness.
