Ingredients

Kinderella Sauce

  • 12 tbsp Kinderella Sauce

Cookie Dough

  • 185 g Unsalted Butter
  • 130 g Caster Sugar
  • 130 g Light Brown Soft Sugar
  • 200 g Kinder Bueno Bars
  • 480 g Plain Flour
  • 0.5 tsp Salt
  • 0.5 tsp Bicarbonate of Soda
  • 12 g Baking Powder
  • 2 Eggs


Instructions

  1. Prepare the Kinderella Sauce disks: Line a flat baking tray with parchment paper. Spoon heaped teaspoons of Kinderella Sauce onto the tray, spaced apart, and place it in the freezer for at least 2-3 hours until set solid.
  2. Cut and mix butter with sugars: Cut the cold unsalted butter into small cubes and place them in a large bowl or stand mixer. Add caster sugar and light brown soft sugar. Mix until the mixture resembles coarse breadcrumbs, with some small butter chunks remaining.
  3. Add chopped Kinder Bueno: Break the Kinder Bueno chocolate bars into pieces and add them to the butter-sugar blend, mixing well to combine evenly.
  4. Combine dry ingredients: In a separate bowl, sift together plain flour, salt, bicarbonate of soda, and baking powder.
  5. Incorporate dry ingredients: Gradually add the flour mixture into the butter-sugar-Kinder Bueno mix, stirring gently until just combined to avoid overmixing.
  6. Add eggs: Whisk the eggs separately, then briefly incorporate them into the dough. The dough will be slightly crumbly and not sticky, which is expected for this recipe.
  7. Form dough balls and stuff: Take about 100g of dough and roll into a ball. Flatten it with your hand, then place a frozen disk of Kinderella Sauce in the center. Enclose the center by bringing dough edges up and sealing it to form a stuffed ball.
  8. Freeze the stuffed dough: Place the stuffed dough balls on a lined baking tray or in an airtight container. Cover and freeze for 2-3 hours or until firm and ready to bake.
  9. Preheat oven: Heat the oven to 180°C (350°F) and place a lined baking sheet in the oven to warm up.
  10. Bake the cookies: Remove the dough balls from the freezer and quickly arrange them on the hot baking tray, spaced to allow spreading. Immediately return the tray to the oven and bake for 15 minutes.
