- Whisk over double boiler: Using a hand whisk, beat the egg whites and syrup mixture over the double boiler until the mixture becomes white and foamy. This helps to pasteurize and gently heat the egg whites.
- Continue whisking with mixer: Remove the bowl from the heat, dry the outside, and transfer it to a kitchen mixer. Beat on medium to high speed until stiff peaks form and the meringue is glossy and smooth.
