Ingredients

1 lb large shrimp, peeled and deveined

1/4 cup teriyaki sauce

2 tbsp olive oil

2 cups cooked rice (preferably jasmine or basmati)

1/2 cup fresh pineapple, diced

1/4 cup red bell pepper, diced

2 tbsp green onions, chopped

1 tbsp sesame seeds (optional, for garnish)

Salt and pepper, to taste


Instructions

  • Marinate Shrimp: In a medium bowl, combine the shrimp and teriyaki sauce. Let it marinate for at least 15 minutes (longer for more flavor).

  • Cook Vegetables: Heat olive oil in a large skillet over medium heat. Add the diced red bell pepper and sauté for 2-3 minutes until softened.

  • Cook Shrimp: Add the marinated shrimp to the skillet. Cook for 3-4 minutes on each side, or until the shrimp turn pink and are cooked through. Remove from heat.

  • Prepare Rice Mixture: In a separate bowl, combine the cooked rice with the diced pineapple and chopped green onions. Stir gently to mix everything together.

  • Assemble the Stack: Using a small bowl or ring mold, layer the rice mixture at the bottom, pressing it gently to compact. Top with the cooked shrimp, ensuring they are evenly distributed.

  • Garnish & Serve: Carefully remove the mold and garnish with sesame seeds and extra green onions. Repeat for additional servings.
