Description

Ingredients

2 cups cooked chicken breast, diced or shredded

1 cucumber, diced

1 cup cherry tomatoes, halved

1/4 red onion, finely chopped

1/4 cup Kalamata olives, chopped (optional)

1/4 cup feta cheese, crumbled

2 tablespoons fresh parsley, chopped

For the tzatziki dressing:

1 cup Greek yogurt

1/2 cucumber, grated and excess water squeezed out

1 tablespoon olive oil

1 tablespoon lemon juice

1 garlic clove, minced

1 tablespoon fresh dill, chopped

Salt and pepper, to taste


Instructions

  1. In a large bowl, combine the cooked chicken, diced cucumber, halved cherry tomatoes, chopped red onion, olives, feta, and parsley. Toss gently to combine.
  2. For the tzatziki dressing, mix the Greek yogurt, grated cucumber, olive oil, lemon juice, minced garlic, fresh dill, salt, and pepper in a small bowl until smooth and well combined.
