Ingredients
2 cups cooked chicken breast, diced or shredded
1 cucumber, diced
1 cup cherry tomatoes, halved
1/4 red onion, finely chopped
1/4 cup Kalamata olives, chopped (optional)
1/4 cup feta cheese, crumbled
2 tablespoons fresh parsley, chopped
For the tzatziki dressing:
1 cup Greek yogurt
1/2 cucumber, grated and excess water squeezed out
1 tablespoon olive oil
1 tablespoon lemon juice
1 garlic clove, minced
1 tablespoon fresh dill, chopped
Salt and pepper, to taste
Instructions
- In a large bowl, combine the cooked chicken, diced cucumber, halved cherry tomatoes, chopped red onion, olives, feta, and parsley. Toss gently to combine.
- For the tzatziki dressing, mix the Greek yogurt, grated cucumber, olive oil, lemon juice, minced garlic, fresh dill, salt, and pepper in a small bowl until smooth and well combined.
- Drizzle the tzatziki dressing over the chicken mixture and toss everything together until evenly coated.
- Serve immediately or refrigerate for later.
