Classic Chocolate Chip Layer
- 2 cups (260g) all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup (168g) unsalted butter, room temperature
- 1/2 cup (112g) packed light brown sugar
- 1/4 cup (52g) sugar
- 1 large egg
- 2 tsp vanilla extract
- 1 1/4 cups (211g) semi-sweet chocolate chips
Funfetti Layer
- 3/4 cup (168g) unsalted butter, room temperature
- 1/4 cup (56g) packed light brown sugar
- 1/4 cup (52g) sugar
- 1 large egg
- 1 tsp vanilla extract
- 15.25 oz box funfetti cake mix
- 6 tbsp (48g) all purpose flour
- 3-4 tbsp sprinkles
- 1 1/4 cups (211g) white chocolate chips
Buttercream Frosting
- 1 1/2 cups (336g) unsalted butter, room temperature
- 6 cups (690g) powdered sugar
- 1 1/2 tsp vanilla extract
- 3-4 tbsp water or cream

Instructions
- Make the Double Chocolate Layer: Preheat the oven to 350°F (180°C). Line and spray a 9-inch cake pan. In a medium bowl, combine flour, cocoa powder, baking soda, and salt. In a mixer, cream butter and sugars until fluffy (2-3 minutes). Add egg and vanilla, mix well. Add dry ingredients and mix until just combined. Fold in chocolate chips. Press dough into pan evenly and bake 18-20 minutes until the surface is no longer glossy. Cool completely. Invert onto cooling racks twice to ensure even cooling.
- Make the Classic Chocolate Chip Layer: Repeat the process: preheat oven to 350°F, prepare pan. Combine flour, baking soda, and salt. Cream butter and sugars until fluffy, add egg and vanilla, mix well. Add dry ingredients, mix until just combined, stir in chocolate chips. Press dough evenly in pan and bake 18-20 minutes until edges are golden and top is not glossy. Cool and invert as before.
- Make the Funfetti Layer: Preheat oven to 350°F, prepare pan. Cream butter and sugars until fluffy. Add egg and vanilla, blend well. Add funfetti cake mix and flour, mix until just combined. Stir in sprinkles and white chocolate chips. Press dough evenly and bake 20-22 minutes until edges golden and top not glossy. Cool and invert as before.
- Make the Buttercream Frosting: Beat butter until smooth. Add half the powdered sugar and mix well. Add vanilla extract and one tablespoon of cream or water; mix. Add remaining powdered sugar and mix until smooth, adding more liquid if needed for desired consistency.
- Assemble the Cake: Level the tops of each cookie layer by cutting off raised edges for even stacking. Place the double chocolate cookie cake on a cake plate and pipe an even layer of buttercream using a piping tip (e.g., Ateco 844). Place the classic chocolate chip cookie layer on top and add another buttercream layer. Place the funfetti cookie cake on top and pipe buttercream swirls around the top edge. Decorate with sprinkles, mini vanilla wafers, and mini chocolate chip cookies.
