Description

Delicious vegan and gluten-free chocolate cookies made with almond and coconut flours, naturally sweetened with monk fruit. These cookies are perfect for those following a plant-based or gluten-free diet, offering a rich chocolate flavor with the added crunch of dark chocolate chips.

Ingredients

Wet Ingredients

  • 2 tbsp coconut oil
  • ⅓ cup almond milk
  • 1 tsp vanilla extract
  • ¼ cup monk fruit sweetener (or ½ cup white sugar)

Dry Ingredients

  • 2 cups almond flour
  • ⅓ cup coconut flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 3 tbsp cocoa powder

Add-ins

  • ⅓ cup dark chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 325ºF (160ºC) and line a baking sheet with baking paper to prevent sticking.
  2. Combine Wet Ingredients: In a mixing bowl, whisk together the coconut oil, almond milk, vanilla extract, and monk fruit sweetener until well combined and smooth.
  3. Add Dry Ingredients: Add almond flour, coconut flour, baking powder, salt, and cocoa powder to the wet mixture. Stir thoroughly until a uniform dough forms.
  4. Fold in Chocolate Chips: Gently fold the dark chocolate chips into the dough, ensuring they are evenly distributed.
  5. Shape Cookies: Using your hands, form the dough into small balls and place them on the prepared baking sheet. Flatten each ball gently with your hand or the back of a spoon. For an extra chocolatey touch, sprinkle a few more chocolate chips on top of each cookie.
  6. Bake Cookies: Bake in the preheated oven for 25-30 minutes, or until the edges of the cookies are firm. Allow the cookies to cool completely; they will continue to firm up as they cool.

Notes

  • Use monk fruit sweetener for a lower sugar option compatible with diabetic diets.
  • Ensuring cookies cool completely is important for optimal texture.
  • You can substitute almond milk with any other plant-based milk if desired.
  • Make sure to line the baking sheet with parchment paper to prevent cookies from sticking.
  • Store cookies in an airtight container for up to 5 days.
