This Vegan Peach Cobbler is a delightful plant-based dessert featuring juicy fresh peaches coated in maple syrup and warm spices, topped with a golden, buttery crumble. It bakes to perfection in under an hour, making it an ideal sweet treat that’s dairy-free, egg-free, and sure to satisfy your cravings with its comforting texture and natural sweetness. Serve warm with vegan vanilla ice cream for the ultimate cozy dessert experience.

Ingredients

Peach Filling

  • 4 cups fresh peaches, sliced
  • 1/4 cup maple syrup
  • 1 tbsp cornstarch
  • 1/2 tsp cinnamon

Crumble Topping

  • 1/2 cup vegan butter, melted
  • 3/4 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 2 tbsp unsweetened almond milk
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp sea salt

Serving

  • Vegan vanilla ice cream (for serving)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cobbler.
  2. Prepare Peach Filling: Arrange the sliced fresh peaches evenly in the bottom of a baking dish. Drizzle them with maple syrup and sprinkle cornstarch and cinnamon over the peaches. Mix gently to combine ensuring the peaches are coated thoroughly.
  3. Make Crumble Batter: In a mixing bowl, combine melted vegan butter, granulated sugar, vanilla extract, unsweetened almond milk, all-purpose flour, baking powder, and sea salt. Stir well until the mixture forms a thick batter.
  4. Assemble Cobbler: Using a spoon, place dollops of the crumble batter evenly on top of the peach filling, covering as much surface as possible for an even topping.
  5. Bake: Bake the cobbler in the preheated oven for 35 to 40 minutes or until the peach mixture is bubbly and the topping has turned a golden brown color.
  6. Cool and Serve: Allow the cobbler to cool slightly before serving. Serve warm, optionally with a scoop of vegan vanilla ice cream for a creamy contrast.

Notes

  • Use ripe but firm peaches for the best texture in the filling.
  • If fresh peaches are out of season, frozen peaches can be used; just thaw and drain excess liquid before using.
  • Maple syrup can be adjusted slightly for sweetness preference.
  • Ensure the vegan butter is fully melted and slightly cooled before mixing to avoid cooking the batter prematurely.
  • Store leftovers covered in the refrigerator for up to 3 days and reheat before serving.
