Ingredients
Peach Filling
- 4 cups fresh peaches, sliced
- 1/4 cup maple syrup
- 1 tbsp cornstarch
- 1/2 tsp cinnamon
Crumble Topping
- 1/2 cup vegan butter, melted
- 3/4 cup granulated sugar
- 1 tsp pure vanilla extract
- 2 tbsp unsweetened almond milk
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp sea salt
Serving
- Vegan vanilla ice cream (for serving)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cobbler.
- Prepare Peach Filling: Arrange the sliced fresh peaches evenly in the bottom of a baking dish. Drizzle them with maple syrup and sprinkle cornstarch and cinnamon over the peaches. Mix gently to combine ensuring the peaches are coated thoroughly.
- Make Crumble Batter: In a mixing bowl, combine melted vegan butter, granulated sugar, vanilla extract, unsweetened almond milk, all-purpose flour, baking powder, and sea salt. Stir well until the mixture forms a thick batter.
- Assemble Cobbler: Using a spoon, place dollops of the crumble batter evenly on top of the peach filling, covering as much surface as possible for an even topping.
- Bake: Bake the cobbler in the preheated oven for 35 to 40 minutes or until the peach mixture is bubbly and the topping has turned a golden brown color.
- Cool and Serve: Allow the cobbler to cool slightly before serving. Serve warm, optionally with a scoop of vegan vanilla ice cream for a creamy contrast.
Notes
- Use ripe but firm peaches for the best texture in the filling.
- If fresh peaches are out of season, frozen peaches can be used; just thaw and drain excess liquid before using.
- Maple syrup can be adjusted slightly for sweetness preference.
- Ensure the vegan butter is fully melted and slightly cooled before mixing to avoid cooking the batter prematurely.
- Store leftovers covered in the refrigerator for up to 3 days and reheat before serving.
