Ingredients

Chocolate Mixture

  • 6 ounces (a little less than 1 cup) semi-sweet chocolate chips
  • 2 tablespoons salted peanut butter
  • Nice pinch of salt

Other Ingredients

  • 6 large or 8 medium (about 100 grams) cinnamon graham crackers
  • 14 vegan marshmallows


Instructions

  1. Prepare the baking sheet: Line a baking sheet with parchment paper and set it aside to make cleanup easy and prevent sticking.
  2. Melt chocolate mixture: In a small microwave-safe bowl, combine the semi-sweet chocolate chips, salted peanut butter, and a pinch of salt. Microwave in 30-second intervals, stirring after each, until the mixture is warm and fully melted. Set aside.
  3. Break graham crackers: Break the cinnamon graham crackers into bite-sized, irregular pieces and place them into a mixing bowl.
  4. Melt marshmallows: In a large microwave-safe bowl, melt the vegan marshmallows in 30-second increments in the microwave. The total melting time should be around 30 seconds. Stir the marshmallows until they become thick and sticky.
  5. Combine graham crackers and marshmallows: Immediately toss the graham cracker pieces into the sticky marshmallow mixture, mixing until they are well coated.
  6. Add melted chocolate: Pour the melted chocolate and peanut butter mixture into the marshmallow and graham cracker bowl. Mix thoroughly until all pieces are well coated in chocolate.
  7. Spread mixture: Pour the combined mixture onto the prepared baking sheet. Spread it into a single layer. It is okay if the mixture stays in chunks, as you will break it apart later.
  8. Set the bark: Place the baking sheet in the freezer for 10 to 20 minutes to allow the bark to set and harden.
  9. Break and serve: Remove from the freezer and break the bark into bite-sized pieces or cut with a knife. Enjoy immediately or store in the refrigerator or freezer. If stored in the freezer, allow it to come to room temperature for about 5 minutes before eating for easier chewing.
