Description
This Vegan S’mores Bark recipe offers a deliciously sweet treat reminiscent of classic campfire s’mores without any fire or stovetop. Combining melted semi-sweet chocolate, salted peanut butter, cinnamon graham crackers, and gooey marshmallows, this no-bake dessert comes together quickly in just 10 minutes. Perfect for an easy, fun, and vegan-friendly snack or dessert that can be enjoyed immediately or stored for later.
Ingredients
Chocolate Mixture
- 6 ounces (a little less than 1 cup) semi-sweet chocolate chips
- 2 tablespoons salted peanut butter
- Nice pinch of salt
Other Ingredients
- 6 large or 8 medium (about 100 grams) cinnamon graham crackers
- 14 vegan marshmallows
Instructions
- Prepare the baking sheet: Line a baking sheet with parchment paper and set it aside to make cleanup easy and prevent sticking.
- Melt chocolate mixture: In a small microwave-safe bowl, combine the semi-sweet chocolate chips, salted peanut butter, and a pinch of salt. Microwave in 30-second intervals, stirring after each, until the mixture is warm and fully melted. Set aside.
- Break graham crackers: Break the cinnamon graham crackers into bite-sized, irregular pieces and place them into a mixing bowl.
- Melt marshmallows: In a large microwave-safe bowl, melt the vegan marshmallows in 30-second increments in the microwave. The total melting time should be around 30 seconds. Stir the marshmallows until they become thick and sticky.
- Combine graham crackers and marshmallows: Immediately toss the graham cracker pieces into the sticky marshmallow mixture, mixing until they are well coated.
- Add melted chocolate: Pour the melted chocolate and peanut butter mixture into the marshmallow and graham cracker bowl. Mix thoroughly until all pieces are well coated in chocolate.
- Spread mixture: Pour the combined mixture onto the prepared baking sheet. Spread it into a single layer. It is okay if the mixture stays in chunks, as you will break it apart later.
- Set the bark: Place the baking sheet in the freezer for 10 to 20 minutes to allow the bark to set and harden.
- Break and serve: Remove from the freezer and break the bark into bite-sized pieces or cut with a knife. Enjoy immediately or store in the refrigerator or freezer. If stored in the freezer, allow it to come to room temperature for about 5 minutes before eating for easier chewing.
Notes
- Use vegan marshmallows to keep this recipe fully vegan.
- Adjust the amount of peanut butter to taste or swap for almond butter if preferred.
- The bark sets quickly in the freezer but can also be chilled in the refrigerator if preferred; it may take a bit longer.
- Store the bark in an airtight container in the fridge for up to one week or in the freezer for up to one month.
- If your marshmallows are not melting well, you can use a double boiler method or an oven at low temperature to melt them gently.
- For added texture, consider stirring in chopped nuts or seeds when mixing the ingredients.
