Ingredients

Cookie Dough

  • 125 g Unsalted butter (room temperature)
  • 150 g Granulated sugar
  • 1 Egg
  • 180 g All purpose flour
  • ½ teaspoon Salt
  • ½ teaspoon Baking soda
  • ½ teaspoon Baking powder
  • 4 teaspoon Matcha powder
  • 150 g Callebaut white chocolate (callets)


Instructions

  1. Whip Butter and Sugar: Using an electric hand mixer, whip the room temperature butter and granulated sugar together for a few minutes until the mixture is light and fluffy.
  2. Add Egg: Mix in the egg just until combined, ensuring the batter remains smooth.
  3. Sift Dry Ingredients and Fold: Sift together the all-purpose flour, matcha powder, salt, baking soda, and baking powder. Fold this mixture gently into the wet ingredients using a rubber spatula.
  4. Incorporate White Chocolate: Fold in the white chocolate callets into the dough, reserving some to add on top of the cookies later.
  5. Prepare Baking Pans: Line two baking pans with parchment paper, and preheat your oven to 175°C (347°F).
  6. Shape Cookies: Divide the dough into 10 equal balls using a digital scale for accuracy. Place them on the parchment-lined pans, leaving enough space for spreading. Keep the balls’ surfaces rough to achieve a nice, crackly texture once baked.
  7. Chill Dough: Refrigerate the shaped dough balls for one hour to firm up before baking.
  8. Bake Cookies: Bake the cookies for 10 minutes, then press reserved white chocolate chips on top. Continue baking for an additional 5 minutes.
  9. Optional Shaping: If desired, apply the pan banging and circular trick with a cookie-cutter to shape the cookies while still warm.
