Ingredients
Cookie Dough
- 125 g Unsalted butter (room temperature)
- 150 g Granulated sugar
- 1 Egg
- 180 g All purpose flour
- ½ teaspoon Salt
- ½ teaspoon Baking soda
- ½ teaspoon Baking powder
- 4 teaspoon Matcha powder
- 150 g Callebaut white chocolate (callets)
Instructions
- Whip Butter and Sugar: Using an electric hand mixer, whip the room temperature butter and granulated sugar together for a few minutes until the mixture is light and fluffy.
- Add Egg: Mix in the egg just until combined, ensuring the batter remains smooth.
- Sift Dry Ingredients and Fold: Sift together the all-purpose flour, matcha powder, salt, baking soda, and baking powder. Fold this mixture gently into the wet ingredients using a rubber spatula.
- Incorporate White Chocolate: Fold in the white chocolate callets into the dough, reserving some to add on top of the cookies later.
- Prepare Baking Pans: Line two baking pans with parchment paper, and preheat your oven to 175°C (347°F).
- Shape Cookies: Divide the dough into 10 equal balls using a digital scale for accuracy. Place them on the parchment-lined pans, leaving enough space for spreading. Keep the balls’ surfaces rough to achieve a nice, crackly texture once baked.
- Chill Dough: Refrigerate the shaped dough balls for one hour to firm up before baking.
- Bake Cookies: Bake the cookies for 10 minutes, then press reserved white chocolate chips on top. Continue baking for an additional 5 minutes.
- Optional Shaping: If desired, apply the pan banging and circular trick with a cookie-cutter to shape the cookies while still warm.
- Cool Cookies: Allow the cookies to rest for a few minutes on the pan before carefully transferring them to a cooling rack to cool completely.
