Description
This White Chocolate Rocky Road is a delightful no-bake treat combining creamy melted white chocolate with chewy marshmallows, fruity raspberry candies, crunchy pistachios, and sweet cookie pieces. Perfectly chilled and sliced for easy serving, it’s a simple, crowd-pleasing dessert that requires minimal effort but delivers maximum flavor and texture contrast.
Ingredients
Chocolate Base
- 300 g good quality white chocolate (roughly chopped)
Mix-ins
- ¾ cup medium-sized marshmallows (about 15, I used Pascal)
- ⅓ cup raspberry chewy candies, cut into quarters (such as Allens Ripe Raspberries or Frogs Alive)
- ⅓ cup shelled unsalted pistachios
- ⅓ cup roughly chopped cookie pieces (3-4 sweet cookies or biscuits)
Instructions
- Prepare Pan: Lightly rub a little oil around the inside of a 4×8 inch loaf pan, then line it with baking paper to ensure easy removal of the rocky road once set.
- Melt Chocolate: Place the chopped white chocolate in a large microwave-safe bowl. Melt it in 30-second increments at 80% power, stirring thoroughly after each interval until just melted. Be careful not to overheat as white chocolate burns easily.
- Combine Ingredients: Add the marshmallows whole, the quartered raspberry chewy candies, shelled pistachios, and chopped cookies to the melted chocolate. Mix gently but well to ensure an even distribution of all ingredients without squashing the marshmallows.
- Set in Pan: Transfer the mixture into the prepared loaf pan. Spread it out evenly, pressing gently to fill the corners and edges.
- Chill: Place the pan in the refrigerator and chill for 2 hours or until the rocky road is completely firm and solid.
- Serve: Once set, remove the rocky road from the pan using the baking paper. Slice into bars or squares and serve chilled for a deliciously chewy and crunchy treat.

Notes
- Use good quality white chocolate to ensure a smooth, creamy texture and rich flavor.
- When mixing the ingredients into the melted chocolate, be gentle so marshmallows remain whole and candy pieces retain their shape for the best texture contrast.
- You can substitute the pistachios with other nuts like almonds or walnuts if preferred, but keep them unsalted for balanced sweetness.
- This rocky road can be stored covered in the refrigerator for up to one week.
- To speed up setting, you may briefly place the rocky road in the freezer after refrigerating for an hour.
