Description

A refreshing and wholesome yogurt parfait made with gelatin jelly, creamy Greek yogurt, fresh strawberries, and topped with chopped almonds and mint. Perfect for a light and elegant treat.


Ingredients

Gelatin Jelly

  • 3 oz gelatin powder
  • 1/2 cup room temperature water

Parfait Layers

  • 1 1/3 cup Greek yogurt
  • 4-6 strawberries, sliced
  • 1 tbsp chopped almonds
  • A little fresh mint to serve


Instructions

  1. Prepare the gelatin mixture: Pour the gelatin powder into a bowl and add 1/2 cup of room temperature water. Let it stand for 15 minutes to allow the gelatin to absorb the water and expand.
  2. Heat the gelatin: Place the bowl with the gelatin mixture into the microwave and heat on high for 1 minute, or alternatively, use a water bath to gently heat it. Then, transfer the mixture to a whisking glass and place that glass in a bowl of ice water. Whip it until the gelatin transforms into a white, jelly-like consistency.
  3. Set the jelly in glasses: Pour the whipped gelatin jelly into individual parfait or stemless wine glasses. Chill them in the refrigerator for about 30 minutes or until firm.
  4. Arrange strawberries: Slice the strawberries and carefully arrange them around the edges of the set gelatin in each glass to create a beautiful presentation.
  5. Fill with yogurt: Spoon the creamy Greek yogurt into the center of each glass, filling it all the way to the top.
  6. Garnish and serve: Decorate the top with fresh sliced strawberries, a sprinkle of chopped almonds, and a few mint leaves for a fresh and colorful finish.
