Base Layer
- 1 ½ cups unsweetened shredded coconut
- ¼ cup coconut oil (melted)
- ¼ cup honey
- 18 raw almonds

- 4 ounces baking chocolate (melted)
Instructions
- Prepare the Pan: Line a loaf pan with parchment paper, ensuring the paper covers the sides for easy removal later. Set aside.
- Mix Ingredients: In a large bowl, combine the unsweetened shredded coconut, melted coconut oil, and honey thoroughly until the mixture is sticky and well blended.
- Form the Base: Press the coconut mixture evenly into the prepared loaf pan. Arrange the raw almonds in three rows of six across the top of the mixture, then press lightly to secure them into the base.
- Chill the Base: Place the pan in the refrigerator and chill until completely firm, at least 2 hours or overnight for best results.
- Cut the Bars: Once firm, lift the solid coconut base out of the pan using the parchment paper. Use a very sharp knife to cut the block into 18 equal squares.
- Coat with Chocolate: Dip each bar into the melted baking chocolate using a fork, allowing any excess chocolate to drip off before placing them back on the parchment paper.
- Set the Chocolate: Refrigerate the dipped bars for about 30 minutes or until the chocolate sets firmly. Keep the bars refrigerated until ready to serve to maintain freshness.
