Pie Dough

Filling

  • 2 apples, cored and thinly sliced

  • 1 tablespoon butter, small cubes


Instructions

  1. Mixing the Dough: In a large bowl, combine the all-purpose flour and salt. Add the cold cubed butter and vegetable shortening. Using a pastry cutter or two knives, cut the fats into the flour mixture until they resemble pea-sized pieces.
  2. Forming the Dough: Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough just comes together into a ball. Avoid overmixing to keep the dough flaky.
  3. Rolling the Dough: Turn the dough out onto a floured surface and shape it into a disk. Lightly flour the top and roll the dough into a large circle approximately 12 inches in diameter. You may use a large bowl about 15 inches to cut a perfect round, or free-form the shape.
  4. Preparing the Apples: Preheat the oven to 400°F (205°C). In a bowl, toss the thinly sliced apples with granulated sugar, ground cinnamon, and lemon juice until evenly coated.
  5. Assembling the Galette: Transfer the rolled dough onto a parchment-lined baking sheet. Arrange the apple slices in a circular pattern on the dough, overlapping towards the center, leaving at least a one-inch border around the edges.
  6. Shaping the Galette: Gently fold and pleat the edges of the dough over the apples, creating a rustic crust edge that encases the filling but leaves the center exposed.
  7. Adding Cranberries and Butter: Scatter the fresh cranberries evenly over the apple slices and dot the top of the filling with small cubes of butter.
  8. Baking: Bake in the preheated oven at 400°F for about 45 minutes or until the crust is golden brown and the apples are tender.
