Ingredients
Batter Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup salted butter, softened at room temperature
- 1 1/4 cup sugar
- 3 eggs, room temperature
- 1 tablespoon vanilla extract
- 1/2 cup sour cream
Apple Filling
- 4 cups chopped apples, peeled and diced into small bite-sized pieces
- 1/4 cup brown sugar
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
Crumb Topping
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/2 cup salted butter, melted
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and spray a 9-inch springform pan generously with non-stick spray to prevent sticking.
- Make the Batter: In a large mixing bowl, combine the softened butter and sugars. Using a hand mixer on medium speed, cream them together for about 4 minutes until the mixture is creamy and fluffy.
- Add Eggs and Vanilla: Add the eggs and vanilla extract to the creamed mixture and mix for 1 minute to fully incorporate.
- Mix in Sour Cream: Add the sour cream and continue mixing for another minute to create a smooth batter.
- Add Dry Ingredients: In a separate bowl, whisk together the flour and baking powder, then add these dry ingredients to the wet ingredients. Mix on medium speed for 2 minutes, scraping down the sides as needed to ensure even blending.
- Prepare the Apples: Peel, core, and dice the apples into small, uniform bite-sized pieces to ensure they cook evenly. Toss the diced apples with brown sugar, nutmeg, and cinnamon in a bowl to coat evenly.
- Prepare the Crumb Topping: In another bowl, combine flour, sugar, brown sugar, and cinnamon. Pour in the melted butter and mix with your hands until the topping forms chunky crumbs with varying sizes.
- Layer the Cake: Pour half of the batter into the prepared springform pan and spread it evenly over the bottom. Then, sprinkle the apple mixture evenly over the batter. Cover the apples with the remaining batter, spreading it to the edges to fully enclose the apple layer.
- Add Crumb Topping and Bake: Sprinkle the crumb topping evenly over the top layer of batter. Place the pan on the center rack of the preheated oven and bake for 80 to 90 minutes until the top is golden brown, the apples are tender, and a toothpick inserted in the center comes out clean.
- Cool and Serve: Remove the cake from the oven and allow it to cool in the springform pan on a wire rack for 30 minutes. Then carefully remove the sides of the springform pan and let the cake cool for an additional 30 minutes before slicing into wedges and serving.
Notes
- Use apples that hold their shape well when baked, such as Granny Smith or Honeycrisp, for best texture.
- Make sure the apple pieces are small so they soften fully during baking.
- The crumb topping should have chunks of varying sizes to provide a pleasing texture contrast.
- Allowing the cake to cool before slicing ensures cleaner slices and better texture.
- Room temperature eggs and butter help achieve a smoother batter and better rise.
