Instructions

  1. Prep: Preheat your oven to 200°F (95°C). Position the top and bottom racks in the upper and lower thirds of the oven. Line two baking sheets with parchment paper and set them aside.
  2. Treat: Prepare a pre-treatment bath by mixing equal parts cold water and lemon juice (½ cup each) in a bowl. Set this aside; it will prevent the apple slices from browning.
  3. Slice: Using a very sharp knife or a mandoline, slice the apples horizontally into ⅛-inch thick rounds. Immediately drop each slice into the lemon-water bath to keep them from discoloring as you continue slicing.
  4. Cinnamon: Remove the apple slices from the bath, pat dry if necessary, and arrange them in a single layer on the prepared baking sheets. Evenly sprinkle ground cinnamon over each apple slice.
  5. Bake and Rotate: Bake at 200°F (95°C) for 1 hour. Then, swap the baking sheets’ positions (move the upper rack sheet to the lower rack and vice versa) and bake for an additional 1 to 1½ hours, ensuring even crisping.
  6. Crisp: Remove the apple chips from the oven and allow them to cool at room temperature for 1 hour. During this time, they will become crisp. If after an hour they are not crisp enough, return them to the oven to bake longer until desired texture is achieved.
