Doughnuts

  • 4 tablespoons salted butter, melted
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1/4 cup strawberry jam
  • 1/2 cup milk
  • 2 cups whole wheat pastry flour (or all purpose)
  • 1 tablespoon freeze dried strawberry powder
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt

Strawberry Glaze

  • 2 ounces cream cheese
  • 2 cups powdered sugar
  • 2-3 tablespoons freeze dried strawberry powder
  • 1/4 cup hot milk
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350° F (175° C). Grease a 6-cup doughnut pan or a 12-cup muffin pan generously with melted butter to prevent sticking.
  2. Mix Wet Ingredients: In a mixing bowl, combine the melted butter, eggs, vanilla extract, honey (or maple syrup), strawberry jam, and milk. Stir these until fully blended.
  3. Add Dry Ingredients: To the wet mixture, add whole wheat pastry flour, freeze dried strawberry powder, baking powder, baking soda, and kosher salt. Mix gently until just combined to ensure tender doughnuts.
  4. Fill the Pan and Bake: Evenly divide the batter among the prepared doughnut or muffin pan cavities, filling each 1/2 to 2/3 full. Bake in the preheated oven for 10-12 minutes or until the doughnuts are just set and a toothpick inserted comes out clean.
  5. Cool and Release: Remove the doughnuts from the oven and let them cool in the pan for about 5 minutes. Then run a knife around the edges to loosen them and invert the pan to release the doughnuts.
