Ingredients
Doughnuts
- 4 tablespoons salted butter, melted
- 1 tablespoon vanilla extract
- 2 large eggs
- 1/4 cup honey or maple syrup
- 1/4 cup strawberry jam
- 1/2 cup milk
- 2 cups whole wheat pastry flour (or all purpose)
- 1 tablespoon freeze dried strawberry powder
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
Strawberry Glaze
- 2 ounces cream cheese
- 2 cups powdered sugar
- 2-3 tablespoons freeze dried strawberry powder
- 1/4 cup hot milk
- 1 teaspoon vanilla extract
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350° F (175° C). Grease a 6-cup doughnut pan or a 12-cup muffin pan generously with melted butter to prevent sticking.
- Mix Wet Ingredients: In a mixing bowl, combine the melted butter, eggs, vanilla extract, honey (or maple syrup), strawberry jam, and milk. Stir these until fully blended.
- Add Dry Ingredients: To the wet mixture, add whole wheat pastry flour, freeze dried strawberry powder, baking powder, baking soda, and kosher salt. Mix gently until just combined to ensure tender doughnuts.
- Fill the Pan and Bake: Evenly divide the batter among the prepared doughnut or muffin pan cavities, filling each 1/2 to 2/3 full. Bake in the preheated oven for 10-12 minutes or until the doughnuts are just set and a toothpick inserted comes out clean.
- Cool and Release: Remove the doughnuts from the oven and let them cool in the pan for about 5 minutes. Then run a knife around the edges to loosen them and invert the pan to release the doughnuts.
- Prepare the Strawberry Glaze: In a bowl, mix the softened cream cheese, powdered sugar, 2-3 tablespoons of freeze dried strawberry powder, hot milk, and vanilla extract until smooth. Add more milk if necessary to achieve a dip-able consistency.
- Glaze the Doughnuts: Dip each cooled doughnut into the strawberry glaze or drizzle the glaze over them. Allow the glaze to set for about 5 minutes before serving.
