Ingredients
Strawberry Cake Layers
- 3 layer strawberry cake recipe or 2 boxes of cake mix
Strawberry Cream Cheese Frosting
- 6 oz butter, softened
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 1/2 oz dehydrated strawberries
- 1 tbsp heavy cream
- 1 tsp vanilla extract
Buttercream Frosting
- 12 oz butter
- 24 oz powdered sugar (about 5 1/4 cups + 2 tbsp)
- 3 tbsp heavy cream
- 2 tbsp vanilla extract
- Pink food coloring (various shades for ombre effect)
Decoration
- Plastic wrap for Barbie’s legs
- Pink sugar pearls (optional)
Instructions
- Prepare Cake Batter. Follow your chosen strawberry cake recipe or box mix instructions to prepare enough batter for 3 layers.
- Prepare Bundt Pan. Use a pastry brush to coat a 9-inch bundt pan with melted butter or shortening, then fill the pan about two-thirds full with cake batter.
- Prepare Round Pans. Grease and line the bottom of two 6-inch round cake pans with parchment paper, then fill each about two-thirds full with cake batter. If using a glass bowl to bake, grease well.
- Bake Cakes. Bake all pans at 350ºF. The 6-inch cakes take approximately 25-30 minutes until golden and a toothpick comes out clean. The bundt cake takes about 10 minutes longer.
- Cool Cakes. Let the 6-inch cakes cool 10-15 minutes in pans before inverting onto wire racks to cool completely. Let the bundt cake cool 10 minutes in pan, then invert onto wire rack to cool completely.
- Remove Centers. Use a biscuit cutter or measuring cup and knife to remove the centers of the 6-inch cakes to create holes.
- Prepare Crumb Coat Frosting. Make strawberry cream cheese frosting and reserve about 4 cups for crumb coating the cake layers.
- Level and Stack Bundt Cake. Level the bundt cake’s dome top and place it on cake stand or cardboard round. Use frosting as glue for any broken pieces.
- Assemble Cake Layers. Frost the top and inner hole of bundt cake, place one 6-inch cake with flat bottom facing up in the hole, then frost and stack the second 6-inch cake with dome top facing up.
- Shape Cake. Use a serrated knife to shave the cake sides to resemble a bell or dress shape; imperfections will be covered by frosting.
- Apply Crumb Coat. Spread a thin layer of crumb coat frosting over the entire cake and chill for at least one hour.
- Prepare Buttercream Frosting. Whip 12 oz butter in a stand mixer until fluffy. Add powdered sugar, heavy cream, and vanilla extract; whip about 2 minutes until light and fluffy.
- Color Frosting. Reserve about 2 cups white frosting. Divide the remainder into two bowls and tint one dark pink and the other light pink for an ombre effect. Place dark pink frosting in a piping bag fitted with a #1M tip.
- Prepare Barbie Doll. Wrap Barbie’s legs with plastic wrap and make sure she is clean and hair styled before inserting into cake. Use clips to keep hair out of the way.
- Pipe Bottom Rosettes. Pipe a row of dark pink rosettes tightly along the cake bottom edge; size them uniformly.
- Pipe Ombre Rosettes. Mix the remaining dark pink frosting with light pink to lighten shade and pipe successive layers of rosettes moving upward, gradually lightening color until near top of cake.
- Top Rosettes and Insert Barbie. Pipe the final layer of lightest or white rosettes on top near center hole. Slide Barbie into the center of the cake, leaning forward if possible. Pipe rosettes touching her and the cake center.
- Fill Gaps and Decorate Corset. Use a smaller star tip (#18) to fill spaces around Barbie’s waist and corset area with mixed light pink and white frosting. Add pink sugar pearls and stars as decorative accents.
- Chill Cake. Refrigerate the assembled cake until ready to serve to allow frosting to set.

- Baking the cakes a day ahead and assembling/frosting the next day results in easier handling and better flavor.
- Use a biscuit cutter or measuring cup to create uniform holes in the small cake rounds for the doll skirt shape.
