Ingredients
Blueberry Sauce
- 2⅓ cups frozen blueberries
- 3 tablespoons maple syrup (or sugar, or more as preferred)
Parfait Layers
- 2 cups Greek yogurt (vanilla or your choice of flavor)
- 2 cups granola
Instructions
- Cook the Blueberry Sauce: In a medium saucepan, combine the frozen blueberries and maple syrup. Cook over medium heat, stirring regularly and mashing the blueberries as they release their juices until they break down. Continue cooking for 10 to 20 minutes, depending on your preferred consistency, from chunky to more sauce-like.
- Assemble the Parfaits: Using mason jars or serving glasses, layer the ingredients starting with ¼ cup of Greek yogurt, followed by ¼ cup of granola, and then ¼ cup of the blueberry sauce. Repeat the layers once more with yogurt, granola, and blueberry sauce. Optionally, garnish with fresh blueberries and mint leaves before serving.
