Ingredients
Butter Mixture
- 2 cups unsalted butter
- 1/2 cup light brown sugar (packed)
- 1 tsp vanilla extract
- 1/4 cup bourbon (use your favorite brand)
Dry Ingredients
- 2 1/4 cups all-purpose flour
- 2 tbsp cornstarch
- 1/4 tsp salt
Instructions
- Preheat the Oven: Set your oven to 350°F (175°C) and allow it to fully preheat while you prepare the dough.
- Brown the Butter: In a skillet over medium-high heat, melt the unsalted butter, stirring frequently. Continue cooking until the milk solids at the bottom of the pan turn a golden brown, releasing a nutty aroma. Be vigilant to prevent burning.
- Cool the Browned Butter: Transfer the browned butter carefully into a mixing bowl and chill it in the refrigerator until it reaches a softened butter consistency, approximately 20 to 30 minutes.
- Cream Butter and Sugar: Using a mixer, beat the cooled brown butter on medium-high speed for 1 to 2 minutes until it becomes light and fluffy. Add the packed light brown sugar and beat for an additional 1 to 2 minutes until the mixture is smooth.
- Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt until evenly combined.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the butter and sugar mixture. Mix on low speed for about 2 minutes until the dough is mostly combined.
- Add Bourbon and Vanilla: Pour in the bourbon and vanilla extract. Continue mixing on low speed until the dough is smooth. If the dough feels too dry, add 1 to 2 teaspoons of water to bring it together.
- Roll Out and Cut Cookies: Lightly flour a clean surface and roll the dough out to about 1/4-inch thickness. Use cookie cutters to cut into your desired shapes.
- Prepare Baking Sheet: Place the cut cookie dough onto a baking sheet lined with parchment paper or lightly greased to prevent sticking.
- Bake: Bake the cookies in the preheated oven for 12 to 13 minutes, or until the edges turn lightly golden.
- Cool: Remove the cookies from the oven and let them cool on the baking sheet for 4 minutes. Then transfer them to a wire rack to cool completely before serving.
Notes
- Use high-quality bourbon for the best flavor impact.
- Chilling the browned butter to softened texture ensures the right consistency for creaming.
- Be careful not to burn the browned butter, as it can turn bitter.
- If dough feels crumbly, add a little water gradually to help it come together.
- Store cookies in an airtight container at room temperature for up to a week.
