Instructions
- Prepare Clementines: Slice each clementine in half horizontally to create 12 halves. Lay them cut side up on a baking tray or heat-safe dish suitable for grilling.
- Add Brown Sugar: Sprinkle 1 teaspoon of soft brown sugar over the cut side of each clementine half evenly, ensuring good coverage.
- Caramelize Sugar: Place the clementine halves under a very hot grill (broiler) positioned close to the heat source. Let them cook for 5-6 minutes or until the sugar melts and caramelizes golden brown. Alternatively, carefully use a culinary blowtorch to caramelize the sugar.
- Prepare Cream Cheese: While the clementines caramelize, place the cream cheese or unwrapped Laughing Cow cheese triangles into a small bowl and stir with a fork until creamy and loosened.
- Top with Cream Cheese: Remove the clementines from the heat and quickly dot the top of each caramelized half with 1/2 tablespoon of the softened cream cheese.
- Drizzle and Garnish: Drizzle 1/2 teaspoon of honey over each clementine half, sprinkle with a few chopped pistachios, and finish by placing a few tiny sprigs of fresh thyme on top for a subtle herbal note.
