- Make the dough: In a large bowl, use a hand mixer or stand mixer to beat the confectioners’ sugar, peanut butter, and melted butter together until the mixture is smooth and fully incorporated. Scrape down the sides and bottom of the bowl to ensure even mixing.
- Shape into balls and chill: Pinch off enough dough to roll into a 1-inch diameter ball. Roll each ball between your palms until smooth. Place all dough balls on a tray and refrigerate for 20 minutes to firm up.
- Melt the chocolate: Microwave the semisweet chocolate chips and shortening on high power in short 5- to 10-second bursts, stirring well after each interval until completely melted and smooth. This prevents burning and ensures a glossy finish.
- Dip in chocolate: Line a baking sheet with parchment or waxed paper. Insert a toothpick into each peanut butter ball, then dip the ball about three-quarters of the way into the melted chocolate, allowing excess chocolate to drip off. Place the dipped ball onto the prepared baking sheet, remove the toothpick carefully, and repeat for all balls. Use a small knife if needed to smooth any toothpick holes.
- Chill to set: Refrigerate the chocolate-dipped buckeyes for about 15 minutes or until the chocolate coating is firm. Once set, transfer them to an airtight container and keep refrigerated until ready to serve.
