Description

These delightful Campfire Eclairs are a fun and easy dessert perfect for outdoor cooking. Using biscuit dough roasted over an open flame, they create a warm, golden shell that’s filled with creamy chocolate pudding, fresh strawberries, whipped cream, and colorful M&M candies for a sweet and satisfying treat the whole family will love.

Ingredients

Biscuit Dough

  • 1 refrigerated package of biscuit dough

Filling

  • 14 oz chocolate pudding
  • 1 pint strawberries, sliced
  • 2 cups whipped cream

Topping

  • 1/2 cup M&M candies

Instructions

  1. Soak Sticks: Pre-soak your large sticks in water for 20 minutes to prevent them from burning when over the fire.
  2. Prepare Dough: Open and unroll the biscuit dough. Stretch out and flatten each biscuit round in your hand to about 1/4-inch thickness, ensuring even cooking.
  3. Wrap Dough on Stick: Stretch one flattened biscuit dough over one soaked stick, smoothing out any creases so the dough is wrapped evenly.
  4. Cook Over Flames: Hold the dough-covered stick over the campfire flames, rotating continuously to cook the dough evenly until golden brown and cooked through, about 5-10 minutes.
  5. Remove Shell: Carefully slide the cooked biscuit shell off the stick without tearing it.
  6. Repeat Cooking: Repeat the wrapping and cooking process with the remaining biscuit dough rounds on sticks.
  7. Fill with Pudding and Strawberries: Divide the chocolate pudding evenly and spoon inside each biscuit shell. Add sliced strawberries to fill the éclairs.
  8. Top with Whipped Cream and M&Ms: Add a generous dollop of whipped cream on top of each filled éclair and sprinkle with M&M candies for a colorful, crunchy finish.

Notes

  • Soaking the sticks is essential to prevent them from catching fire while roasting the dough.
  • Make sure to rotate the sticks continuously for even browning and avoid burning.
  • You can substitute chocolate pudding with any other preferred filling, such as vanilla or caramel pudding.
  • Use fresh strawberries for the best flavor; you can also add other berries or fruits if desired.
  • For a dairy-free version, use dairy-free whipped cream and pudding alternatives.
