Description

This Carrot Cake Dip is a luscious, creamy dessert dip that combines the warm, spiced flavors of caramelized carrots, cinnamon, and brown sugar with rich cream cheese and crunchy pecans. Perfect served with graham crackers, apple slices, cinnamon sugar chips, or pretzel crisps, this dip offers the comforting taste of carrot cake in a fun and shareable form, ideal for parties and gatherings.

Ingredients

Caramelized Carrots

  • 1 cup shredded carrots (packed)
  • 1 tablespoon butter
  • 3 tablespoons dark brown sugar (packed)
  • ½ teaspoon ground cinnamon

Cream Cheese Mixture

  • 8 ounce block cream cheese (room temperature)
  • 1 tablespoon dark brown sugar (packed)
  • ¼ teaspoon ground cinnamon
  • ⅓ cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (sifted)
  • ¼ cup finely chopped pecans (plus additional for optional garnish)

For Serving

  • Graham crackers
  • Apple slices (red or green)
  • Cinnamon sugar chips
  • Pretzel crisps

Instructions

  1. Prepare the Carrots: Shred carrots on the large side of a grater then roughly chop the shreds into smaller pieces to maintain texture.
  2. Caramelize the Carrots: Melt butter in a medium skillet over medium-high heat. Stir in brown sugar, ground cinnamon, and carrots. Cook for 4-6 minutes until liquid evaporates and carrots are tender and lightly browned. Remove from heat, cool completely, reserving 1 tablespoon for garnish.
  3. Mix Cream Cheese Base: Beat cream cheese, brown sugar, and cinnamon on medium-high speed for 2-3 minutes until fluffy and smooth.
  4. Add Liquids: Mix in heavy cream and vanilla extract on low speed until fully combined.
  5. Add Powdered Sugar: Incorporate powdered sugar on low speed then increase to medium-high and beat for 1-2 minutes until fluffy.
  6. Fold in Pecans and Carrots: Gently fold chopped pecans and cooled caramelized carrots into the cream cheese mixture.
  7. Chill the Dip: Cover with plastic wrap and refrigerate for 30 minutes to set and blend flavors.
  8. Serve: Transfer the chilled dip to a serving bowl. Garnish with reserved caramelized carrots and additional chopped pecans. Serve alongside graham crackers, apple slices, cinnamon sugar chips, or pretzel crisps.

Notes

  • For best texture, do not over-shred or finely chop the carrots; keeping some texture improves the dip.
  • The dip can be prepared a day ahead and refrigerated, allowing flavors to meld.
  • Use full-fat cream cheese and heavy cream for the creamiest texture.
  • Optional garnishes such as extra pecans or a sprinkle of cinnamon add visual appeal and taste.
  • Store leftovers covered in the refrigerator for up to 3 days.
