Instructions
- Prepare Cherries: Wash the cherries thoroughly, remove the pits, and quarter them to set aside for later use in the ice cream mixture.
- Heat Dairy Mixture: In a medium saucepan over medium heat, combine the heavy cream, low-fat milk, granulated sugar, and kosher salt. Stir occasionally until the sugar dissolves and the mixture warms until just before boiling, approximately 10 minutes.
- Whisk Egg Yolks: In a small bowl, whisk the egg yolks until smooth and well blended.
- Temper Egg Yolks: Slowly add about 1/4 cup of the warm milk mixture into the egg yolks while whisking, to gradually raise their temperature without curdling.
- Combine and Thicken Custard: Slowly pour the tempered egg yolk mixture back into the saucepan with the remaining warm dairy mixture, stirring constantly. Continue cooking over medium heat until the custard thickens enough to coat the back of a spoon.
- Add Coke Syrup: Remove the pan from heat and stir in the coke syrup to incorporate its unique flavor into the custard base.
- Cool Mixture: Transfer the ice cream base to a container and refrigerate for about 2 hours until completely cooled.
- Blend with Cherries: Pour the cooled ice cream base into a blender, add the quartered cherries, and pulse twice to mix cherries without pureeing them.
- Churn Ice Cream: Pour the blended mixture into your ice cream machine and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Freeze or Serve: For soft-serve style, serve immediately. For firmer ice cream, transfer to a freezer-safe container, cover, and freeze for at least 8 hours before serving.
