These Chocolate Cherry Cheesecake Ice Lollies combine creamy cheesecake, rich dark chocolate, sweet cherry pie filling, and crunchy biscuit crumbs into a delightful frozen treat. Ingredients

Cheesecake Mixture

  • 350 g (1 1/2 cups) cream cheese, room temperature
  • 75 g (2/3 cup) icing sugar (confectioners’ sugar), sifted

Chocolate Mixture

  • 100 g (3.5 oz) dark chocolate, melted

Fruit Mixture

  • 200 g (7 oz) cherry pie filling

Biscuit Crumbs

  • 5 (approx 1/2 cup) digestive biscuits or graham crackers, crushed into fine crumbs


Instructions

  1. Prepare the cheesecake base: Whisk together the cream cheese and icing sugar in a bowl until fluffy to create a smooth and sweet cheesecake mixture.
  2. Combine chocolate mixture: Half of the cream cheese mixture is added to the melted dark chocolate, stirring until fully combined, forming a rich chocolate cheesecake layer.
  3. Mix cherry cheesecake layer: The other half of the cream cheese mixture is combined with the cherry pie filling in a separate bowl to create a fruity cheesecake layer.
  4. Fill ice-lolly moulds: Carefully spoon or pipe the chocolate cheesecake mixture into the bottom of ten ice-lolly moulds, then top each with the cherry cheesecake mixture.
  5. Add biscuit crumbs and bind: Divide the crushed biscuit crumbs equally between each mould, gently stirring with a toothpick to lightly mix some crumbs into the cheesecake mixture. This binds the crumbs to prevent them from falling off when unmoulded.
  6. Insert sticks and freeze: Push ice lolly sticks into each mould and place the moulds in the freezer. Freeze for at least 4 hours until fully set before removing and serving.
