- ¼ cup peanut butter (divided)
- ¼ cup chopped roasted peanuts (divided)
Chocolate Coating
- 4 ounces dark chocolate bar, cut into chunks
Instructions
- Prepare the Dates: Use a small sharp knife to cut a lengthwise slit in each medjool date. Carefully remove the pits, creating space to fill the dates.
- Stuff the Dates: Fill each pitted date with 1 teaspoon of peanut butter, then sprinkle 1 teaspoon of crushed roasted peanuts on top. Set the stuffed dates aside.
- Melt the Chocolate: Place the chunks of dark chocolate in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly between each to ensure the chocolate melts evenly and smoothly without burning.
- Dip the Dates: Insert a toothpick into each stuffed date for easy handling. Dip each date into the melted chocolate, using a spoon to coat it completely. Allow any excess chocolate to drip back into the bowl.
- Garnish and Set: Transfer the chocolate-coated dates onto a tray or plate lined with parchment paper. Sprinkle the tops with the remaining crushed peanuts for added texture and flavor.
