Description

Delightful and refreshing Chocolate Covered Raspberries feature fresh raspberries coated in creamy vanilla Greek yogurt and encased in rich dark chocolate. This no-bake, freezer-set treat combines the tangy sweetness of fruit with indulgent chocolate, perfect for a light dessert or snack.

Ingredients

Fruit

  • 28 to 30 fresh raspberries (washed and dried)

Yogurt Coating

  • ⅓ cup vanilla full-fat Greek yogurt

Chocolate Coating

  • ½ cup dark chocolate chips
  • 2 teaspoons coconut oil

Instructions

  1. Prepare the Pan: Line a sheet pan with parchment paper to prevent sticking and make clean-up easy.
  2. Coat the Raspberries: Using a toothpick or your fingers, dip each fresh raspberry into the vanilla Greek yogurt until evenly coated. Place each coated raspberry onto the parchment-lined sheet pan.
  3. Freeze the Yogurt Layer: Place the sheet pan in the freezer and let the yogurt harden for about 30 minutes. This step ensures the yogurt coating firm enough to dip in chocolate.
  4. Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave on high in 20-second increments, stirring thoroughly between each interval until the chocolate is fully melted and smooth.
  5. Dip in Chocolate: Once the yogurt layer is firm, dip each yogurt-covered raspberry into the melted chocolate until fully coated. Return the chocolate-covered raspberries to the parchment-lined sheet pan.
  6. Set the Chocolate: Place the sheet pan back in the freezer and chill until the chocolate coating has completely set. Once frozen, enjoy immediately or transfer to a freezer-safe bag for storage and future indulgence.

Notes

  • Ensure raspberries are completely dry before coating to help yogurt adhere properly.
  • If you don’t have vanilla Greek yogurt, plain Greek yogurt mixed with a little vanilla extract works well.
  • For a dairy-free version, substitute Greek yogurt with a plant-based yogurt and choose dairy-free chocolate chips.
  • Store the finished treats in an airtight container in the freezer to maintain freshness.
  • These make a perfect bite-sized treat for parties or a healthy dessert option.
