Ingredients
Main Ingredients
- Cooking spray
- 10 ounces frozen spinach, thawed
- 1 cup Greek yogurt
- 8 ounces cream cheese, softened
- 1 ¼ cups shredded mozzarella cheese, divided
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon kosher salt, plus more to taste
- Freshly ground black pepper, to taste
- French bread, slightly toasted, for serving
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) and place an oven rack in the upper third position. Lightly spray an 8×11-inch baking dish with cooking spray to prevent sticking and set it aside.
- Prepare the spinach: Place the thawed frozen spinach in a colander and press out as much excess water as possible using a clean kitchen towel or your hands. This ensures your dip won’t be watery.
- Mix the base: In a large mixing bowl, blend the Greek yogurt and softened cream cheese until smooth and creamy. Then, add the spinach, 1 cup of shredded mozzarella, Parmesan cheese, garlic powder, onion powder, kosher salt, and freshly ground black pepper. Stir until all ingredients are well combined.
- Assemble the dip: Transfer the mixture into the prepared baking dish and spread it evenly. Sprinkle the remaining ¼ cup of shredded mozzarella evenly over the top of the dip.
- Bake and broil: Bake in the preheated oven for about 5 to 10 minutes, just until the cheese melts. Then switch the oven to high broil and move the baking dish to the top rack. Broil for 2 minutes or until the cheese becomes golden brown and bubbly. Keep a close eye to avoid burning.
- Serve: Remove the dip from the oven and serve immediately with slightly toasted French bread slices, crackers, or pita for dipping. Enjoy the warm, cheesy goodness!
Notes
- Make sure to thoroughly drain the spinach to prevent excess moisture in the dip.
- You can substitute cream cheese with Neufchâtel for a lighter version.
- For a spicier twist, add a pinch of crushed red pepper flakes or a dash of hot sauce to the mix.
- If you prefer a smoother texture, pulse the mixture briefly in a food processor before baking.
- This dip can be prepared a few hours ahead and refrigerated; just bake and broil before serving.
