Description

These Crunchy Peanut Butter Cups combine creamy peanut butter with crispy Rice Krispies and a smooth chocolate topping for a delicious no-bake treat. Perfectly sweetened with honey or maple syrup, these cups are easy to make and freeze-ready for a quick snack or dessert.


Ingredients

Peanut Butter Mixture

  • 1½ cup all-natural runny peanut butter
  • ½ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • ¼ cup honey (or maple syrup, or more to taste)
  • 1¼ cup Rice Krispies cereal

Chocolate Topping

  • 1½ cup chocolate chips
  • 2 teaspoons coconut oil


Instructions

  1. Prepare the Peanut Butter Mixture: In a bowl, combine the runny peanut butter, melted coconut oil, vanilla extract, honey, and Rice Krispies cereal. Mix thoroughly until all ingredients are well incorporated.
  2. Fill the Moulds: Spoon about 3 tablespoons of the peanut butter mixture into each cavity of a muffin mold, pressing lightly to distribute evenly.
  3. Freeze the Base: Place the muffin molds in the freezer for 30 minutes to 1 hour or until the peanut butter mixture is firm and has hardened.
  4. Melt the Chocolate: In a microwave-safe bowl, combine chocolate chips and 2 teaspoons coconut oil. Microwave on high in 20-second intervals, stirring well between each until the chocolate is completely melted and smooth.
  5. Top with Chocolate: Pour or spoon the melted chocolate over the hardened peanut butter cups in the muffin molds, covering the tops evenly.
  6. Final Freeze: Return the filled muffin molds to the freezer and chill for at least 1 hour to let the chocolate set firmly. Once set, remove from molds and store in a freezer bag in the freezer.
