Description

This Easy Matcha Sheet Cake offers a delightful fusion of classic vanilla cake with the earthy, vibrant flavor of matcha green tea. Topped with a smooth and creamy matcha-infused cream cheese frosting, this cake is simple to make and perfect for sharing at any gathering or teatime.

Ingredients

Cake

  • 1 box Vanilla Cake Mix
  • 2 tbsp matcha powder
  • 3 eggs
  • 100 ml oil
  • 250 ml milk
  • 1 tsp vanilla extract

Frosting

  • 250 grams butter, room temperature
  • 230 grams cream cheese
  • 1 bag Vanilla Icing Mix
  • 2 – 3 tsp matcha powder (adjust to taste)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 180°C (356°F) and line a sheet cake pan with parchment paper to prevent sticking and ensure easy removal of the cake.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs, oil, vanilla extract, and milk until fully combined, creating a smooth and consistent mixture.
  3. Add Dry Ingredients: Incorporate the vanilla cake mix and 2 tablespoons of matcha powder into the wet ingredients. Stir gently until just combined to avoid overmixing, which can affect the cake’s texture.
  4. Bake the Cake: Pour the batter evenly into the prepared sheet cake pan. Bake in the preheated oven for about 30 minutes, or until a toothpick inserted into the center comes out clean, indicating the cake is fully cooked.
  5. Prepare Matcha Cream Cheese Frosting: While the cake is baking, use a mixer to cream together the room-temperature butter and cream cheese until the mixture becomes fluffy and lighter in color, which usually takes a few minutes.
  6. Add Icing Mix and Matcha Powder: Add the entire vanilla icing mix bag and 2 to 3 teaspoons of matcha powder to the creamed mixture. Adjust the amount of matcha powder according to your taste preference and mix thoroughly until smooth.
  7. Frost the Cake: Once the cake has cooled completely to room temperature, spread the matcha cream cheese frosting evenly over the top to create a smooth, attractive finish.
  8. Serve: Cut the frosted cake into squares and enjoy your moist, flavorful matcha sheet cake with friends and family.

Notes

  • Ensure the cake is completely cool before frosting to prevent the frosting from melting.
  • Adjust matcha powder in the frosting to suit your desired intensity of flavor.
  • The vanilla cake mix can be substituted with gluten-free or other specialty cake mixes if desired.
  • For extra decoration, sprinkle a light dusting of matcha powder over the frosting or add edible flowers.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
