Description
These Easy Mochi Waffles are a delightful twist on traditional waffles, made with sweet rice flour to create a chewy and crispy texture. Perfect for breakfast or brunch, these waffles combine the rich flavors of vanilla and butter with a unique mochi texture that pairs beautifully with syrup, fruit, or savory sides.
Ingredients
Wet Ingredients
- 2 eggs
- 1 cup milk
- 1/4 cup melted butter (can be substituted with vegetable oil)
- 1 Tbsp vanilla extract
Dry Ingredients
- 1 3/4 cups sweet rice flour (Mochiko flour, glutinous rice flour, or sticky rice flour)
- 1/4 cup corn starch
- 1/4 cup sugar
- 1 Tbsp baking powder
- 1/2 tsp salt
Instructions
- Make Mochi Waffle Batter: In a large mixing bowl, whisk together the wet ingredients: eggs, milk, melted butter (or vegetable oil), and vanilla extract until well combined. Gradually add the dry ingredients—sweet rice flour, cornstarch, sugar, baking powder, and salt—whisking thoroughly until the batter is smooth and free of lumps. Set the batter aside.
- Cook Waffles: Preheat your waffle iron to the highest setting. Lightly coat the waffle plates with cooking oil spray to prevent sticking. Using a 1/3 cup measuring cup, scoop the batter onto the center of the hot waffle iron. Cook according to the manufacturer’s instructions for about 3 to 4 minutes or until the waffles turn golden brown and develop a crispy exterior.
- Transfer Waffles: Carefully remove the cooked waffles and place them on a wire rack set over a baking sheet. This setup allows air to circulate beneath the waffles, keeping them crispy and preventing sogginess.
- Serve: Transfer the waffles to a serving platter. Optionally sprinkle with powdered sugar and serve alongside maple syrup, bacon or breakfast sausage, fresh fruit, and your favorite coffee or beverage. Enjoy your chewy, crispy mochi waffles!
Notes
- Sweet rice flour is essential for the chewy texture; do not substitute regular rice flour.
- Use a non-stick or well-seasoned waffle iron for best results.
- To keep waffles warm and crispy, place them on a wire rack instead of stacking.
- For a dairy-free option, substitute milk with almond milk and butter with vegetable oil.
- Leftover waffles can be frozen and reheated in a toaster or oven.
