Delight in these Fruity S’mores Marshmallow Blinis, a playful twist on classic s’mores featuring fluffy mini pancakes layered with marshmallow fluff, fresh strawberries and kiwi, drizzled with melted white and dark chocolate, and finished with crunchy digestive biscuit crumbs. Perfect for a fun dessert or sweet snack, these blinis come together quickly on the stovetop and serve up to 22 people with 20-25 tasty stacks.
Ingredients
Batter
- 80 g (2/3 cup) plain (all-purpose) flour
- 1 ¼ tsp baking powder
- ¼ tsp salt
- 20 g (2 tbsp) unsalted butter, melted
- 1 large egg
- 120 ml (1/2 cup) milk
Toppings and Assembly
- 5 tbsp marshmallow fluff
- 10 strawberries, chopped into very small pieces
- 1 large or 2 small kiwi fruit, peeled and chopped into very small chunks
- 50 g (1.75 oz) white chocolate, melted
- 50 g (1.75 oz) dark chocolate, melted
- 2 digestive biscuits or Graham crackers, crumbled
Instructions
- Make the batter: In a bowl, mix together the flour, baking powder, and salt. Add the melted butter, egg, and milk. Whisk everything using a hand whisk until the batter is thick and lump-free, ready for cooking.
- Cook the blinis: Heat a non-stick frying pan or skillet over medium heat. Drop teaspoon-sized blobs of batter onto the pan, leaving a little space between each as they will spread slightly. Cook for 1-2 minutes on each side until the blinis are lightly browned and cooked through. Repeat for 3-4 batches until all batter is used, making approximately 40-50 blinis.
- Assemble the stacks: Once the blinis are cooked, place two on a plate. Spread 1/2 teaspoon of marshmallow fluff on each blini. Top one with a few chunks of strawberry and drizzle about 1/4 teaspoon of melted dark chocolate on top. On the other blini, add a few chunks of kiwi fruit and drizzle with melted white chocolate.
- Layer and finish: Place another blini on top of each fruit-topped blini to form a stack. Add another layer of fruit and drizzle a little more melted chocolate on top. Finish by sprinkling a pinch of crumbled digestive biscuits over each stack for crunch.
- Serve: Repeat assembling until you have 20-25 blini stacks. Serve immediately if you prefer the chocolate melted and gooey, or cover and serve within 1-2 hours if you prefer the chocolate to firm up.
