Ingredients

Peanut Butter Mixture

  • 4 – 4 ½ cups powdered sugar

Chocolate Coating

  • 3 cups semi sweet morsels


Instructions

  1. Cream the butters: In a large bowl, cream together the peanut butter and salted butter until the mixture is smooth and well combined, creating a creamy base for the buckeyes.
  2. Add powdered sugar: Incorporate half of the powdered sugar into the peanut butter mixture until blended, then gradually add the remaining sugar until the dough reaches a thick consistency that is no longer sticky.
  3. Shape the dough balls: Line a baking sheet with parchment paper. Using a cookie scoop, portion out the peanut butter dough onto the sheet. Freeze for 5 to 10 minutes to slightly harden and make the dough easier to handle.
  4. Melt the chocolate: While the dough chills, melt the semi-sweet chocolate morsels in a microwave-safe dish. Heat for 45 seconds initially, stir, then continue microwaving in 30-second intervals, stirring between sessions to prevent burning. Allow the melted chocolate to cool slightly before dipping.
  5. Form smooth balls: Remove the dough from the freezer and roll each scoop into a smooth, even ball by gently rolling between the palms of your hands in both directions.
  6. Dip in chocolate: Using a toothpick, dip each peanut butter ball about two-thirds of the way into the melted chocolate. If the toothpick leaves a mark, gently smooth the surface by pressing with your finger.
