Ingredients
Peanut Butter Mixture
- 2 cups creamy peanut butter
- 1 cup salted butter, room temperature
- 4 – 4 ½ cups powdered sugar

- 3 cups semi sweet morsels

- Cream the butters: In a large bowl, cream together the peanut butter and salted butter until the mixture is smooth and well combined, creating a creamy base for the buckeyes.
- Add powdered sugar: Incorporate half of the powdered sugar into the peanut butter mixture until blended, then gradually add the remaining sugar until the dough reaches a thick consistency that is no longer sticky.
- Shape the dough balls: Line a baking sheet with parchment paper. Using a cookie scoop, portion out the peanut butter dough onto the sheet. Freeze for 5 to 10 minutes to slightly harden and make the dough easier to handle.
- Melt the chocolate: While the dough chills, melt the semi-sweet chocolate morsels in a microwave-safe dish. Heat for 45 seconds initially, stir, then continue microwaving in 30-second intervals, stirring between sessions to prevent burning. Allow the melted chocolate to cool slightly before dipping.
- Form smooth balls: Remove the dough from the freezer and roll each scoop into a smooth, even ball by gently rolling between the palms of your hands in both directions.
- Dip in chocolate: Using a toothpick, dip each peanut butter ball about two-thirds of the way into the melted chocolate. If the toothpick leaves a mark, gently smooth the surface by pressing with your finger.
- Set the buckeyes: Place the chocolate-coated buckeyes back onto the parchment-lined baking sheet and return them to the freezer for 20 to 30 minutes, allowing the chocolate to firm up completely.
- Serve: Let the buckeyes come to room temperature briefly before serving for the best texture and flavor enjoyment.
