Ingredients

Chicken Nuggets

  • 4 skinless, boneless chicken breasts
  • 50 g Greek yoghurt
  • 50 g Panko breadcrumbs
  • 30 g grated parmesan
  • 2 tsp paprika
  • 2 tsp garlic powder
  • Salt and pepper to taste
  • Olive oil for drizzling or spraying

Sauces

  • 75 g Greek yoghurt
  • 3 tsp runny honey
  • 1 tsp wholegrain mustard
  • 100 g mayonnaise
  • 5 tsp sweet chilli sauce


Instructions

  1. Preheat the oven: Set your oven to 220℃ fan, 240℃ conventional, Gas Mark 9, or 425°F to get it ready for baking the nuggets.
  2. Prepare the chicken: Cut the chicken breasts into even, bite-sized chunks using scissors or a sharp knife to ensure uniform cooking.
  3. Coat chicken with yoghurt: Place the chicken pieces into a large bowl and thoroughly coat them with 50 g of Greek yoghurt.
  4. Mix the breadcrumb coating: In a separate bowl, combine the panko breadcrumbs, grated parmesan, paprika, garlic powder, salt, and pepper.
  5. Coat the chicken pieces: Roll each yoghurt-coated chicken chunk in the breadcrumb mixture, ensuring an even and complete coating.
  6. For oven cooking: Arrange the coated chicken pieces on a baking sheet lined with baking paper. Make sure not to overcrowd; use two trays if necessary.
  7. Add oil: Lightly drizzle olive oil over each nugget or use an oil spray to ensure a crispy texture.
  8. Bake: Cook in the oven for about 20 minutes or until golden and crispy, checking for doneness as times may vary slightly by oven.
  9. Prepare the sauces: While the nuggets bake, mix the ingredients for each sauce separately in small bowls: Greek yoghurt with honey and mustard for one, and mayonnaise with sweet chilli sauce for the other.
  10. Alternatively, Air Frying: Place the coated nuggets carefully in a single layer inside the air fryer basket without overcrowding. Cook at 220℃ (400°F) for 15 minutes, extending cooking time slightly for extra crispiness if needed. Use a meat thermometer to ensure the chicken is fully cooked.
  11. Serve: Once cooked, serve the nuggets hot with the prepared dips for dipping enjoyment.
