Description

These Honey Almond Cookies are a simple, naturally sweetened treat made with almond flour and apple purée or mashed bananas. With a soft texture and a nutty flavor, they are perfect for a healthy snack or dessert. Made without refined sugar, these cookies are easy to prepare and baked to golden perfection in just under half an hour.

Ingredients

Wet Ingredients

  • 3/4 cup apple purée (or 2 ripe bananas, mashed, about 1 cup)
  • 2 tablespoons honey (or agave syrup)

Dry Ingredients

  • 2 1/2 cups almond flour (preferably blanched)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (177°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and ensure even baking.
  2. Mix the wet ingredients: In a mixing bowl, combine the apple purée (or mashed bananas) with the honey (or agave syrup). Stir well to combine until the mixture is smooth and uniformly mixed.
  3. Add the almond flour: Gradually add the almond flour to the wet mixture, stirring continuously until all the flour is fully incorporated into a cookie-like batter with a cohesive texture.
  4. Shape the cookies: Roll the dough into 18 small, evenly sized balls. Arrange them on the prepared baking sheet, spacing each cookie 1 to 2 inches apart to allow for slight spreading while baking.
  5. Bake: Place the baking sheet in the preheated oven and bake the cookies for 20 to 25 minutes, or until the tops are a light golden brown and the cookies are firm to the touch.
  6. Cool and serve: Remove the cookies from the oven and allow them to cool on the baking sheet for several minutes before transferring to a wire rack to cool completely. Enjoy your naturally sweetened Honey Almond Cookies!

Notes

  • You can substitute apple purée with mashed ripe bananas for a slightly different flavor and texture.
  • Ensure the almond flour is finely ground and blanched for the best cookie texture.
  • Cookies may be soft right out of the oven but will firm up as they cool.
  • Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • For a vegan option, use agave syrup instead of honey.
