Description
These Honey Almond Cookies are a simple, naturally sweetened treat made with almond flour and apple purée or mashed bananas. With a soft texture and a nutty flavor, they are perfect for a healthy snack or dessert. Made without refined sugar, these cookies are easy to prepare and baked to golden perfection in just under half an hour.
Ingredients
Wet Ingredients
- 3/4 cup apple purée (or 2 ripe bananas, mashed, about 1 cup)
- 2 tablespoons honey (or agave syrup)
Dry Ingredients
- 2 1/2 cups almond flour (preferably blanched)
Instructions
- Preheat the oven: Preheat your oven to 350°F (177°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and ensure even baking.
- Mix the wet ingredients: In a mixing bowl, combine the apple purée (or mashed bananas) with the honey (or agave syrup). Stir well to combine until the mixture is smooth and uniformly mixed.
- Add the almond flour: Gradually add the almond flour to the wet mixture, stirring continuously until all the flour is fully incorporated into a cookie-like batter with a cohesive texture.
- Shape the cookies: Roll the dough into 18 small, evenly sized balls. Arrange them on the prepared baking sheet, spacing each cookie 1 to 2 inches apart to allow for slight spreading while baking.
- Bake: Place the baking sheet in the preheated oven and bake the cookies for 20 to 25 minutes, or until the tops are a light golden brown and the cookies are firm to the touch.
- Cool and serve: Remove the cookies from the oven and allow them to cool on the baking sheet for several minutes before transferring to a wire rack to cool completely. Enjoy your naturally sweetened Honey Almond Cookies!
Notes
- You can substitute apple purée with mashed ripe bananas for a slightly different flavor and texture.
- Ensure the almond flour is finely ground and blanched for the best cookie texture.
- Cookies may be soft right out of the oven but will firm up as they cool.
- Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- For a vegan option, use agave syrup instead of honey.
