Instructions

- Combine Ingredients: In a 9×5-inch metal loaf pan, pour the freshly squeezed lime juice, the cooled simple syrup, and the grated lime zest. Whisk thoroughly until the mixture is well combined.
- Initial Freeze: Place the loaf pan in the freezer and freeze the mixture for 3-4 hours, or until it is mostly firm but not completely solid, preparing it for blending.
- Blend the Sorbet: Transfer the semi-frozen mixture to a high-speed blender or food processor. Blend for one to two minutes until smooth. Be careful not to over-blend as this could warm the mixture and affect the texture.
- Final Freeze: Pour the blended sorbet back into the loaf pan and return it to the freezer for an additional 4 hours or up to overnight to firm up completely.
