Ingredients

Instructions

  1. Make the Simple Syrup: In a medium-sized saucepan over medium heat, combine the sugar and water. Simmer gently for 1-2 minutes, whisking occasionally, until all the sugar dissolves completely. Remove from heat and allow the syrup to cool to room temperature. You should obtain about 1 ¼ cups of simple syrup.
  2. Combine Ingredients: In a 9×5-inch metal loaf pan, pour the freshly squeezed lime juice, the cooled simple syrup, and the grated lime zest. Whisk thoroughly until the mixture is well combined.
  3. Initial Freeze: Place the loaf pan in the freezer and freeze the mixture for 3-4 hours, or until it is mostly firm but not completely solid, preparing it for blending.
  4. Blend the Sorbet: Transfer the semi-frozen mixture to a high-speed blender or food processor. Blend for one to two minutes until smooth. Be careful not to over-blend as this could warm the mixture and affect the texture.
  5. Final Freeze: Pour the blended sorbet back into the loaf pan and return it to the freezer for an additional 4 hours or up to overnight to firm up completely.
  6. Serve: Before serving, let the sorbet sit at room temperature for a couple of minutes to soften slightly. Serve with a sprig of fresh mint for garnish if desired.
