Instructions

  1. Blend the ingredients: Add the frozen mango chunks, ¼ cup of the sweetener of your choice, lime juice, and lime zest into a large food processor or blender. Blend for 1-2 minutes, scraping down the sides every 20-30 seconds to ensure everything is well incorporated and smooth. If desired sweetness is not reached, add additional sweetener 1 tablespoon at a time, blending thoroughly after each addition until it tastes just right.
  2. Prepare for freezing: Transfer the smooth mango mixture into a 9×5-inch metal loaf pan. Use a spatula to spread the sorbet mixture evenly over the bottom of the pan to create a uniform layer.
  3. Freeze the sorbet: Place the loaf pan in the freezer and allow the sorbet to freeze for at least 4 hours or preferably overnight to firm up completely.
