Ingredients

Butter

  • ⅔ cup / 150g unsalted butter

Dry Ingredients

  • ⅔ cup / 133g granulated sugar
  • 1 cup / 100g almond flour
  • 5 tablespoons / 50g cake flour
  • pinch of salt
  • 2 tablespoons matcha powder

Wet Ingredients

  • 1 teaspoon honey
  • 4 egg whites


Instructions

  1. Preheat and prepare pan: Preheat the oven to 400°F (200°C). Butter a mini muffin pan to prevent sticking and set it aside.
  2. Brown the butter: Melt the unsalted butter in a small pan over medium heat, swirling regularly. Continue cooking until the milk solids brown and the butter releases a nutty aroma. Remove from heat and let the browned butter cool.
  3. Mix dry ingredients: In a large bowl, whisk together the granulated sugar, almond flour, cake flour, matcha powder, and a pinch of salt until evenly combined.
  4. Add wet ingredients: Whisk in the honey and egg whites into the dry mixture until fully incorporated and smooth.
  5. Combine with browned butter: Gradually whisk the cooled browned butter into the batter until thoroughly combined, ensuring a smooth texture.
  6. Fill and bake: Evenly divide the batter among 12 wells of the prepared mini muffin pan. Bake for 10-12 minutes, until the edges are set and a toothpick inserted into the center comes out clean.
  7. Cool: Let the financiers cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
