Description
These Mini Egg Burgers are a delightful and protein-packed snack or light meal, combining hard-boiled eggs with flavorful ground lamb patties and a touch of honey Dijon mustard. Perfect for a quick and nutritious bite, the recipe uses an air fryer for cooking the patties, resulting in juicy and perfectly cooked mini burgers that are easy to assemble and enjoy.
Ingredients
Eggs
- 3 eggs (hard boiled)
Meat Patties
- 105 grams lean ground lamb (or any ground meat of choice)
- Salt to taste
Burger Assembly
- Baby spinach (or lettuce), as needed
- 3 teaspoons honey Dijon mustard (or spicy mayo)
- Optional: sesame seeds or everything-but-the-bagel seasoning for topping
Instructions
- Boil the Eggs: Bring a pot of water to a boil, gently add the eggs, and cook for 8 minutes. Immediately transfer the eggs to an ice bath (a bowl of water and ice) to cool down quickly, then peel and set aside.
- Prepare the Patties: Divide the ground meat into 3 equal portions (about 35 grams each). Roll each portion into a ball, then flatten them into small patties suitable for mini burgers.
- Cook the Patties: Place the patties in the air fryer basket and cook at the highest heat setting (around 415°F) for 7 to 8 minutes, ensuring they are cooked through and nicely browned.
- Season the Patties: Remove the patties from the air fryer and season with salt and pepper to taste.
- Assemble the Mini Egg Burgers: Slice each hard-boiled egg in half horizontally. On the bottom half of each egg, add a few baby spinach leaves, a cooked meat patty, and a spoonful of honey Dijon mustard.
- Finish the Burger: Top each assembled half with the remaining egg half. If you want, sprinkle some sesame seeds or everything-but-the-bagel seasoning for extra flavor and texture.
- Optional Tip: For a more stable base, trim a small slice off the bottom of the egg half before assembling the burger to prevent it from rolling.
Notes
- Use any ground meat of choice if lamb is not preferred; beef, chicken, or turkey also work well.
- The mustard can be swapped for spicy mayo or your preferred condiment.
- Make sure to cool eggs rapidly in an ice bath to make peeling easier and to stop cooking.
- The air fryer temperature may vary based on your model; adjust time slightly if needed.
- For an additional crunch or flavor, add sliced pickles or cheese inside the mini burgers if desired.
