Description

This Mini Skillet Cookie, also known as a Pizookie, is a decadent dessert featuring a warm, gooey chocolate chip cookie baked in a small cast iron skillet. Perfectly soft in the center with golden edges, it’s ideal for sharing and topped with optional treats like vanilla ice cream, caramel sauce, and whipped cream for an indulgent sundae experience.


Ingredients

Cookie Batter

  • ¼ cup unsalted butter (half a stick, melted)
  • ¼ cup granulated sugar
  • ¼ cup dark brown sugar
  • ¼ teaspoon salt
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • ½ cup plus 3 tablespoons all purpose flour
  • ¼ teaspoon baking soda
  • 3 ounces dark chocolate (roughly chopped, or ½ cup chocolate chips)

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) to prepare for baking your skillet cookie evenly.
  2. Mix Butter and Sugars: In a medium bowl, whisk together the melted unsalted butter, granulated sugar, dark brown sugar, and salt until the mixture is well combined and smooth.
  3. Add Egg Yolk and Vanilla: Incorporate the egg yolk and vanilla extract into the mixture, whisking continuously until the batter becomes light and fluffy, approximately 2 minutes.
  4. Combine Dry Ingredients: Add the all-purpose flour and baking soda to the bowl, folding with a rubber spatula until no dry streaks remain, ensuring a uniform dough.
  5. Fold in Chocolate: Gently fold in the chopped dark chocolate or chocolate chips until just combined, distributing chocolate evenly.
  6. Transfer to Skillet: Pour and spread the batter evenly into a 5- or 6-inch cast iron skillet, cake pan, or similar baking dish.
  7. Add Sea Salt: Sprinkle a pinch of flaky sea salt over the top of the batter to enhance the cookie’s flavor.
  8. Bake: Bake in the preheated oven for 20–25 minutes, or until the edges turn golden brown and set while the center remains soft and slightly doughy.
