Perfect for a party snack or a fun dessert, these bite-sized clusters set in just minutes and offer a delightful combination of sweet and salty flavors.
Ingredients
Chocolate Mixture
- 1 bag (24 ounce) semi-sweet chocolate chips
- 1 tablespoon coconut oil
- 3/4 cup creamy or crunchy peanut butter
Mix-Ins
- 3 cups brown rice crisps
- 1 cup pretzels, broken
- 1 cup mini M&M’s (regular M&M’s work too)
Instructions
- Melt Chocolate and Coconut Oil: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Heat in the microwave in 30-second increments, stirring after each, until the mixture is smooth and melted.
- Mix in Peanut Butter and Crunchy Ingredients: Stir the peanut butter into the melted chocolate mixture until fully combined. Then fold in the brown rice crisps, broken pretzels, and mini M&M’s until everything is evenly coated.
- Form Clusters and Chill: Using a tablespoon, scoop spoonfuls of the mixture onto a parchment-lined baking sheet. Place the sheet in the refrigerator or freezer for about 10 minutes or until the clusters are set and firm.
- Store and Serve: Once set, keep the Monster Crunchies stored in the fridge or at room temperature in an airtight container to maintain their texture and freshness.
Notes
- You can substitute peanut butter with almond or sunflower butter for different flavors or if allergies are a concern.
- Using crunchy peanut butter adds extra texture to the clusters.
- Store Monster Crunchies in an airtight container to prevent them from melting or becoming stale.
- For a dairy-free version, ensure the chocolate chips used are vegan and free from milk products.
- These treats are best enjoyed within a week for optimal freshness.
