Description

This No Bake Banana Split Cake is a delightful, easy-to-make dessert perfect for any occasion. Layers of a buttery graham cracker crust, creamy sweetened cream cheese filling, fresh bananas, strawberries, crushed pineapple, and whipped topping come together to create a refreshing and indulgent treat reminiscent of a classic banana split. Ready in just over two hours and requiring no baking, this make-ahead dessert is both convenient and crowd-pleasing.

Ingredients

Crust

  • 2 cups graham crackers (about 14 whole graham crackers, cinnamon sugar or plain)
  • ½ cup butter (melted)
  • ½ cup white sugar

Cream Cheese Filling

  • 16 ounces cream cheese (two 8-ounce boxes)
  • 1 cup confectioners’ sugar

Fruit Toppings

  • 4 bananas (sliced)
  • 1½ cups strawberries (sliced)
  • 15 ounces crushed pineapple (canned, drained)

Final Toppings

  • 8 ounces whipped topping (Cool Whip or store brand, thawed)
  • 15 maraschino cherries (drained)
  • ⅓ cup peanuts (optional topping)
  • ¼ cup chocolate sauce (optional drizzle on top)

Instructions

  1. Gram Cracker Crust: Place the graham crackers in a gallon-size ziplock bag, seal it, and crush them using a rolling pin or your hands until they become fine crumbs. Melt the butter carefully in the microwave to avoid overheating.
  2. Combine Crust Ingredients: In a medium bowl, mix the graham cracker crumbs, melted butter, and ½ cup white sugar until fully combined. Press this mixture evenly into the bottom of a 9×13-inch dish to form a thin crust. Refrigerate for 20 minutes to set.
  3. Cream Cheese Filling Preparation: Soften the cream cheese by microwaving it on medium power for 30-40 seconds, stirring every 20 seconds until very soft but not warm. Using a hand mixer, beat the softened cream cheese and 1 cup confectioners’ sugar first on low until smooth, then on high for 60 seconds to create a creamy filling.
  4. Spread Cream Cheese Layer: Evenly spread the whipped cream cheese mixture over the chilled graham cracker crust.
  5. Layer Fruits: Arrange sliced bananas evenly on top of the cream cheese layer. Next, drain the crushed pineapple and distribute it uniformly over the bananas. Then, evenly layer the sliced strawberries over the pineapple.
  6. Top with Whipped Topping and Final Garnishes: Gently spread the softened whipped topping over the entire fruit layer. Decorate the surface with maraschino cherries and chopped peanuts if using.
  7. Chill and Serve: Refrigerate the assembled dessert for at least 2 hours or overnight to allow flavors to meld and the cake to set. Before serving, optionally drizzle chocolate sauce over the top for an extra touch.

Notes

  • For easier slicing, refrigerate the cake overnight.
  • Use ripe but firm bananas to prevent them from browning quickly.
  • Adjust sweetness by modifying the amount of sugar in the filling or using sugar-free alternatives.
  • Peanuts are optional and can be substituted with other nuts or omitted for allergies.
  • Ensure the whipped topping is fully thawed and softened for easy spreading.
  • Keep the dessert refrigerated until served to maintain freshness and texture.
