Ingredients

Base

  • 1 ½ cup oat flour
  • 1 cup almond flour

  • 1 cup creamy peanut butter

Chocolate Topping

  • 1 cup chocolate chips
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon coconut oil


Instructions

  1. Prepare Pan: Line a 9×9-inch square baking pan with parchment paper, allowing some overhang to make lifting the bars easier later. Set aside.
  2. Mix Dry Ingredients: In a large bowl, whisk together the oat flour, almond flour, and salt until well combined to create a uniform base mixture.
  3. Melt Peanut Butter: In a microwave-safe bowl, heat 1 cup creamy peanut butter for 30–60 seconds until melted and smooth. Stir in maple syrup and vanilla extract until thoroughly combined.
  4. Combine Base Mixture: Pour the dry ingredients into the wet peanut butter mixture and stir well until fully combined and thick. Fold in ½ cup chocolate chips gently. Transfer this mixture into the prepared pan and press evenly to form the base layer.
  5. Make Chocolate Topping: Melt 1 cup chocolate chips, 2 tablespoons peanut butter, and 1 tablespoon coconut oil together in the microwave or on the stovetop. Stir until smooth and creamy. Spread this chocolate mixture evenly over the base layer in the pan.
  6. Chill: Refrigerate the bars for about 2 hours until firm. Before cutting, let the bars sit at room temperature for 5 minutes to soften slightly for easier slicing.
