Ingredients
Base
- 1 ½ cup oat flour
- 1 cup almond flour
- ¼ teaspoon salt
- 1 cup creamy peanut butter
- ¾ cup maple syrup
- 1 teaspoon vanilla extract
- ½ cup chocolate chips
Chocolate Topping
- 1 cup chocolate chips
- 2 tablespoons creamy peanut butter
- 1 tablespoon coconut oil
Instructions
- Prepare Pan: Line a 9×9-inch square baking pan with parchment paper, allowing some overhang to make lifting the bars easier later. Set aside.
- Mix Dry Ingredients: In a large bowl, whisk together the oat flour, almond flour, and salt until well combined to create a uniform base mixture.
- Melt Peanut Butter: In a microwave-safe bowl, heat 1 cup creamy peanut butter for 30–60 seconds until melted and smooth. Stir in maple syrup and vanilla extract until thoroughly combined.
- Combine Base Mixture: Pour the dry ingredients into the wet peanut butter mixture and stir well until fully combined and thick. Fold in ½ cup chocolate chips gently. Transfer this mixture into the prepared pan and press evenly to form the base layer.
- Make Chocolate Topping: Melt 1 cup chocolate chips, 2 tablespoons peanut butter, and 1 tablespoon coconut oil together in the microwave or on the stovetop. Stir until smooth and creamy. Spread this chocolate mixture evenly over the base layer in the pan.
- Chill: Refrigerate the bars for about 2 hours until firm. Before cutting, let the bars sit at room temperature for 5 minutes to soften slightly for easier slicing.
- Serve: Cut into 12-16 squares and serve immediately, or store the bars in the refrigerator to maintain firmness.
