This No Bake Mounds Roll, also known as Almond Joy Roll, is a delicious, easy-to-make dessert that combines a rich chocolatey cookie crust with a creamy coconut filling reminiscent of the classic candy bars. Ingredients
Cookie Crust
- 3 cups graham cracker crumbs (or cookie crumbs)
- 1 tablespoon sugar (optional)
- 4 tablespoons unsweetened cocoa powder
- 1 cup warm water
Coconut Filling
- 10 ounces sweetened coconut flakes
- 1 stick unsalted butter (room temperature)
- 1/3 cup powdered sugar
- 1/2 cup sweetened condensed milk
Instructions
- Pulse: Place graham cracker crumbs or cookies in a food processor and pulse until they reach a fine, cornmeal-like texture.
- Mix Crumbs: Transfer the fine crumbs to a large mixing bowl and add the cocoa powder. Stir to combine.
- Dissolve Sugar: In a small bowl, mix warm water and sugar, then microwave for 1 minute to create a syrup, stirring to dissolve the sugar completely. Add this syrup to the crumb mixture and blend using a fork until combined.
- Knead Dough: Using your hands, knead the mixture until it forms a non-sticky, pliable dough similar to play dough. Add more warm water one tablespoon at a time if needed.
- Roll Dough: Lay plastic wrap on the counter, place the dough ball in the center, and roll into a thin rectangle approximately 10×12 inches. Press broken areas together to maintain shape and trim the edges with a knife.
- Prepare Coconut Filling: Using an electric mixer or hand mixer, beat butter and powdered sugar until fluffy, about 1-2 minutes. Scrape the bowl, add sweetened condensed milk, and mix until smooth.
- Combine Filling: Fold in sweetened coconut flakes using a spatula until evenly incorporated.
- Assemble Roll: Spread the coconut filling evenly over the cookie dough sheet, leaving a ½ inch border around the edges. Using the plastic wrap, carefully roll the dough and filling into a tight log, pressing gently to shape.
- Chill: Wrap the log tightly in plastic wrap and refrigerate for at least 1 hour to set.
